Farm 2 School 2008: Kansas City Educational Course

On Wednesday, November 19th the University of Missouri Extension, with funding by the North Central Regional office of USDA’s Sustainable Agriculture Research and Education program, will offer a day-long course for Extension Educators, School Food Service Directors, School Administrators, Community Developers and Policy Makers to gain a better understanding of how Farm to School programs in Missouri can be achieved and the impact that they can have on our local communities.  

The Co-Director of the National Farm to School organization, the nation’s leader in farm to school assistance AND a representative from the Kerr Center of Oklahoma, the Midwest’s leader in farm to school assistance will present on happenings from around the country and discuss how those ideas can be implemented here in Missouri.  You will also have the chance to speak with individuals involved in farm to school projects that are currently happening in West-Central Missouri this school year.

Farm to School projects from around the country, as well as around the globe have allowed local communities to reconnect to their local agriculture communities, instilled better nutritional habits, increased the economic vitality of rural communities and provided agricultural education to children in rural, suburban and urban schools.

Try this recipe with your family and friends and let us know how it turned out.

Bistro Jeanty

Cream of Tomato Soup in Puff Pastry 

 

 

Serves 6

½ cup butter unsalted

½ lb. Yellow onions-sliced

6 ea. Garlic cloves

1 ea. Bay leaf

½ Tbl. Whole black peppercorns

1 tsp. Dried thyme leaves

1/4 cup tomato paste

2 ½ ib. tomatoes-ripe, cored, and quartered

1 cup water (no more-use

 

 

 

 

 

only

if tomatoes are not ripe and juicy)

4 cups heavy cream

2- 4 Tbl. Butter

salt to taste

½ tsp. Ground white pepper

1 lb. Puff pastry-or store bought sheets

1 ea. Egg- beaten with 1 Tbl. of water

 

 

 

Procedure

Melt the ½ cup butter in a large stockpot over medium-low heat. Add the onions, garlic, thyme, bay leaf and peppercorns; cover and cook for about 5 minutes. Do not let the onions color. Add tomato paste and lightly “toast” the tomato paste to cook out the raw flavor the add tomatoes, and

water if needed. Simmer over low heat for 30-40 minutes, until the tomatoes and onions are very soft and broken down.

Puree by passing through a food mill. A food mill works best however you may use a blender in batches or a handheld immersion blender until finished, the strain. Return the soup o the pot. Add the cream, salt, white pepper and remaining butter to taste. Bring soup to a simmer the remove from heat. Allow the soup to cool for two hours or overnight – in the refrigerator.

Divide the soup among six 8-ounce soup cups or bowls. Roll out the puff pastry to 1/4 inch. Cut into 6 rounds slightly larger than your cups. Paint the dough with the egg wash and turn the circles, egg wash side down, over the tops of the cups, pulling lightly on the sides to make the dough somewhat tight like a drum. Try not to allow the dough to touch the soup. These may be made up to 24 hours in advance and covered with plastic in the refrigerator.

Preheat oven to 450 degrees.

Lightly paint the top of the dough rounds with egg wash with out pushing the dough down. Bake for 10-15 minutes, until the dough is golden brown. Do not open the oven in the first several minutes of cooking as the dough may fall. Serve immediately.

PUMPKIN SANDWICH COOKIES

 

Yield: 24

 

 

Ingredient                                           Amount

 

Filling:

 

Cream Cheese                                     2 pkg

Powdered Sugar                                 1 C

Butter, room temp.                              1 stick

Vanilla                                                 2 t

 

Cookies:

 

Flour, 50/50                                         2 ¾ C

Cinnamon                                             4 ½ t

Baking Powder                                     2 t

Nutmeg                                                 1 ½ t

Ginger                                                  1 ½ t

Baking Soda                                         1 t

Salt                                                      1 t

Butter                                                   2 ½ sticks

Sugar                                                    1 ½ C

Molasses                                               3 T

Vanilla                                                  2 t

Eggs                                                     4

Pumpkin, canned                                  1 ¼ C

Buttermilk                                             ½ C

 

Method:

 

For filling: Beat all ingredients with mixer till smooth

 

For cookies: Whisk first 7 ingredients in medium bowl. With electric mixer beat remaining ingredients. Blend in dry ingredients, until just combined.

 

Line rimmed baking sheet with parchment. Drop by rounded spoonfuls and bake at 325° for 13 minutes, or till toothpick inserted in center comes out clean. Cool on racks. When cool, spread filling on in between 2 cookies. Yum!

One Bite at a Time

I came across something that I wanted to share with you.  Dr. Neal Barnard, a Clinical Researcher and author once said, “We send our children to the best schools we can afford, and try to equip them with moral values that will last a lifetime.  We also give them food  habits that when they grow up, will cut short two out of every three lives.” 

Bistro Kids is striving  to change that by making a difference – one bite at a time.

St. Therese School

Recently our Farm2School Lunch program was invited to St. Therese School in Parkville Missouri.  We fixed lunch for 819 students, parents, and faculty and had a great time with everyone.  We would like to thank Carol Hussin and John Garitz for welcoming us to their wonderful school.
